Corn Pudding
Ingredients- 1 can Whole Kernal corn, undrained
- 1 can creamed corn
- 8 oz sour cream
- 2 eggs, slightly beaten
- 1/2 cup butter melted
- 1 box Jiffy corn bread Mix
How to make it
- Mix both corns, sour cream, eggs and butter, mixing well.
- Fold in Jiffy mix.
- Pour into glass soufflé dish (or any other of your choosing)
- Bake at 350 for one hour or until golden brown on top and no longer pale looking.
Creamy Mashed Cauliflower
This Mashed Cauliflower recipe is an amazing alternative to potatoes. What you’ll need:
Ingredients:
- 1 t. crumbled dried rosemary or a couple of T. of minced fresh
- Sea salt to taste (about 2 t.)
- Fresh ground pepper to taste
- 2 eggs
- 2 large sweet onions, chopped in small dice
- 2 c. of chopped celery, in small dice
- 3 T. of butter
- 2 T. finely minced garlic
- 3 c. of chicken broth.
- 1 loaf of sourdough bread, cut into ½ cubes and dried overnight or store prepared
- 12 oz can of marinated artichoke hearts, drained and chopped in medium dice
- 1 c. freshly grated parmesan. (the kind you buy in the chunk!)
- 1 tsp. Poultry seasoning
