The Weekly 6 - Quick and Easy Holiday Side Dishes

Corn Pudding

Ingredients

  • 1 can Whole Kernal corn, undrained
  • 1 can creamed corn
  • 8 oz sour cream
  • 2 eggs, slightly beaten
  • 1/2 cup butter melted
  • 1 box Jiffy corn bread Mix

 
How to make it
  • Mix both corns, sour cream, eggs and butter, mixing well.
  • Fold in Jiffy mix.
  • Pour into glass soufflĂ© dish (or any other of your choosing)
  • Bake at 350 for one hour or until golden brown on top and no longer pale looking.

 
Creamy Mashed Cauliflower
 
This Mashed Cauliflower recipe is an amazing alternative to potatoes. What you’ll need:
  • One head of raw cauliflower or one pound bag of frozen cauliflower florets
  • 3 oz. package of softened cream cheese
  • 2 Tbs. butter
  • heavy whipping cream
  • 1/4 cup cheese, parm or cheddar (optional)
  • Options: seasoning salt, garlic powder, garlic salt, roasted or minced garlic, chives

 
 Artichoke Sourdough Dressing; It's Not Your Grandma's Stuffing!
Ingredients:
 
  • 1 t. crumbled dried rosemary or a couple of T. of minced fresh
  • Sea salt to taste (about 2 t.)
  • Fresh ground pepper to taste
  • 2 eggs
  • 2 large sweet onions, chopped in small dice
  • 2 c. of chopped celery, in small dice
  • 3 T. of butter
  • 2 T. finely minced garlic
  • 3 c. of chicken broth.
  • 1 loaf of sourdough bread, cut into ½ cubes and dried overnight or store prepared
  • 12 oz can of marinated artichoke hearts, drained and chopped in medium dice
  • 1 c. freshly grated parmesan. (the kind you buy in the chunk!)
  • 1 tsp. Poultry seasoning

Prep:

 
Saute the onion, garlic and celery in the butter till tender. Add the chicken brother, heat till warm. With a fork whisk the two eggs slightly. Pour the broth and vegetables over the cubed bread, and stir in the eggs, the parmesan, the artichokes, and the seasonings.

 
Either stuff your bird and bake till bird is done. Or you can spoon into buttered casserole dish, cover with foil until knife inserted in center is almost dry, then uncover and brown the top.

 
Cook at 350 degrees if outside the bird.
